Version 1.13 is most stable but 1.14 has some improvements (like changes to meadow grass to let it grow in all biomes) and the 1.15 has signs. Masterwork by default has graphics enabled, you can switch between available tilesets with phoebius and ironhand possibly the most complete. The /raw/objects/ files are the ones that cause problems if they are not for the same version of Dwarf Fortress that you are using. v50 Steam/Premium information for editors. If you really want to install a graphics pack that is not compatible, then copy over everything except for the /raw/objects/ files. Extract a copy of Dwarf Fortress, and place the folder next to './Lazy Newb Pack.exe' The Dwarf Fortress folder can be named anything starting with 'Dwarf Fortress' (ie './Dwarf Fortress 9001/' would work). A graphics pack that says it's for DF v0.43.05 should not be used with DF v0.43.03 unless the graphics pack author says it's safe to do so. Make sure the graphics pack you are installing is compatible with the specific version of Dwarf Fortress that you are using. If you want this copy it into your /Dwarf Fortress/raw/ folder. This probably contains some custom config settings for Text Will Be Text. Most notably, there may be some kind of dfhack.init or onload.init type of file in the /raw/ folder of your graphics pack. There may be some other files, but they are optional. That should be everything you need to install.
